The two-day session gathered university rectors, project leads, curriculum specialists, and donor agency representatives from across Southeast Asia to assess progress during the project’s first implementation phase.

On Friday, April 18, 2025,
Associate Professor Dr. Rapeephun Dangtungee, Dean of the International College, Maejo University, attended the ceremony to acknowledge and respond to the Royal Command graciously appointing Associate Professor Dr. Thep Phongpanich as the Chairman of the University Council of Maejo University. The event took place at the Inthanin Room, 2nd Floor, University Office Building.
The Royal Appointment announcement from the Office of the Prime Minister was presented by Associate Professor Jakkrapong Pimphimon, Vice President and Secretary of the University Council, and was read aloud by Associate Professor Dr. Weerapon Thongma, the President of Maejo University.
On this occasion, the newly appointed Chairman of the University Council expressed his deep gratitude for His Majesty’s royal benevolence and declared his commitment to fulfilling his duties with loyalty and dedication, aiming to advance the university for the benefit of the nation.
University executives, members of the University Council, the Maejo University Alumni Association, and other stakeholders were also present to extend their congratulations and join in this significant event.

Maejo University Presents “Larb x Lab” E...

Maejo University, in collaboration with the Tourism Authority of Thailand (Chiang Mai Office), the Go2askAnn and Niyom Thai Facebook pages, professional chefs, and local larb experts, co-hosted the “Larb x Lab: A Healthy Buffalo Makes the Finest Larb” exhibition on April 14–15, 2025. This groundbreaking exhibition showcased the full spectrum of knowledge surrounding larb muang (Northern-style larb), delving into its historical, cultural, and culinary dimensions.
The event featured live cooking demonstrations by renowned chefs and panel discussions with experts on various aspects of larb muang. Dr. Nitath Boonpaisansatit, a lecturer from the Faculty of Liberal Arts and researcher in the LMC Spice Routes project at Maejo University, joined the discussion to share insights on the use of spices in larb chili pastes, and on the roles of herbs and vegetables accompanying larb. Dr. Kanjana Sommit, project manager of LMC Spice Routes from Maejo International College, also contributed her expertise, exchanging knowledge about larb-related spices with attendees.
The Larb x Lab exhibition was not only held in celebration of the Pi Mai Mueang (Lanna New Year) festival but also served as a storytelling platform about larb muang. The event brought together “Larb Warriors” and knowledgeable individuals to share diverse perspectives on larb kwai (buffalo larb), a significant dish in Lanna festivals. Stories covered a wide range of topics—from why Northern Thais traditionally eat buffalo larb, to the complex blend of unique spices, herbs, and side dishes that accompany the dish.
Visitors also learned how larb is more than just food—it is a rich cultural expression of Lanna people, deeply rooted in tradition, storytelling, and family ties. Each dish of festival larb reflects meticulous care—from the selection of meat (using nearly every part of the buffalo), to achieving balance in flavor and aroma with spices, understanding the origins of those spices, incorporating local vegetables, and using traditional tools such as the larb knife. The exhibition also touched on how larb is being reimagined through fusion cuisine.
The exhibition continues to be on display at the warehouse behind Flo Coffee Roaster until the end of April. Admission is free.

📅On Thursday, April 3, 2025,
Maejo University officially launched the project titled “LMC Spice Routes: The Development of Gastronomy and Cultural Tourism Platform” at Royal Star Meeting Room, 5th Floor, Office Building, Maejo University, Chiang Mai. The initiative is supported by the Lancang-Mekong Special Fund under the collaboration between Thailand’s Ministry of Higher Education, Science, Research and Innovation and the Embassy of the People’s Republic of China in Thailand for the year 2024.
The project is led by Dr. Kanjana Sommit, from Maejo International College, with Dr. Nitath Boonpaisalsatit from Faculty of Liberal Arts as the project coordinator. The opening ceremony was presided over by Assoc. Prof. Dr. Weerapon Thongma, President of Maejo University, joined by university executives, faculty members, and over 40 participants both on-site and via Zoom.
Participants included spice farmers, producers, sellers, chefs, specialists, media representatives, and academics working in the spice industry. Their involvement reflects the diverse stakeholders engaged in shaping the cultural and economic landscape of the Mekong region.
The project aims to achieve three key objectives:
1.To create and exchange knowledge on spices and food culture in the Mekong region
2.To develop a digital platform and spice-based tourism routes
3.To formulate marketing strategies for gastronomic and cultural spice tourism in the region
The project is implemented in collaboration with partner organizations from four countries:
• Thailand: Maejo International College and Faculty of Liberal Arts, Maejo University
• China: Yunnan University of Science and Technology
• Lao PDR: Tiddin Social Enterprise
• Myanmar: Kokoya Organic Yangon and Myanmar Organic
The event also featured the signing of a research collaboration agreement and a knowledge-sharing session where participants exchanged insights and experiences related to spices and culinary heritage. The initiative fosters regional cooperation to promote cultural tourism and sustainable biodiversity conservation.

Basic Chinese Language Training at Maejo...

📅On April 1, 2025,
Maejo University International College organized a basic Chinese language training course for the university’s staff to enhance communication skills for daily life and work. The objective was to provide participants with the opportunity to learn a new language and improve their ability to use Chinese in everyday life. During the event, Associate Professor Dr. Rapeephun Dangtungee, Dean of the International College, honored the participants by delivering a welcoming speech.
The Chinese language training course, organized by Maejo University International College, was led by the main instructor, Ajarn Lin Tzu, who has extensive experience in teaching Chinese. Ajarn Lin is a native speaker and an expert in teaching Chinese. The atmosphere in the training was lively, with participants actively engaging and enjoying the session. Over 30 participants joined the training, creating a vibrant learning environment filled with laughter and interaction.
Maejo University International College hopes that this training will inspire all participants to continue learning Chinese and that they will be able to apply the skills and knowledge gained from the training in both their daily lives and professional careers effectively.

📅On March 31, 2025.
Dr. Winitra Leelapattana, Associate Dean, Dr. Suthira Sitthikun, Assistant Dean, Mr. Warunsiri Sujinda, Director of the International College along with Assistant Professor Dr. Danaikrit Inthurit and Dr. Watcharanan Thongma, faculty lecturer at the International College, participated in the workshop.
The event was officially opened by Associate Professor Dr. Weerapol Thongma, the President of Maejo University. The purpose of the workshop was to enable research program managers and faculty administrators to set clear goals, understand the roles of research and academic services in alignment with the university's policies and national strategies, and create research and academic service plans that integrate interdisciplinary work. This approach aims to make research and academic services stand out and meet the needs of the university and national policies, ultimately leading to increased research and academic service funding.
